Sweet clover

Sweet clover (Melilotus) is a tall meadow legume with slender spikes of yellow or white flowers and a characteristic sweet, hay-like scent that intensifies on drying — the smell of coumarin.

It was traditionally noted in connection with circulation and lymphatic flow. Improperly fermented hay can form a strong anticoagulant, so the plant is dried carefully.
